A craft fermented lemonade made from lemons grown in Kankitsuzan.

Inspired by the traditional Finnish fermented lemonade “SIMA”, “Sima” and “Sima Neroli” are released as Kankitsuzan fermented lemonades, bringing together our lemons and the fermentation expertise of mitosaya Botanical Distillery.


The lemons are cultivated in Kankitsuzan without the use of pesticides for over fourteen years. Fruit not meeting visual standards is also fully utilized, allowing both juice and peel to express their full aromatic potential.

A gentle effervescence formed through natural fermentation, with a soft, balanced sweetness. The result is a refined, quietly layered taste.

|Sima (Lemon)
A clean, layered taste, with the acidity softened through fermentation, bringing out both the juice and peel of Kankitsuzan lemons.

|Sima Neroli (Lemon & Neroli)
Layered with the fragrance of neroli, adding a gentle floral lift to the freshness of lemon.

As part of the “Shokunō” initiative, the lemon peels are processed by hand, one by one, with the involvement of mitosaya staff and Shokunō participants.

This careful process reduces unwanted bitterness and brings clarity and structure to the aroma.
